Years ago, I perfected an easy marinade for just about any cut of steak.  It requires just about 20 minutes of preparation before you cook it, so it’s a fast recipe for when you come home after a long day at work.

It is a fantastic recipe, simply the best steak—with the exception of the Fiorentina, see above.  Every time I eat in a steak house I wonder why it is so difficult for them to make a decent steak! It never compares to mine!

Ingredients (for 1 or 2 steaks)

  • ½ red onion
  • Handful fresh Italian basil
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Mince ½ red onion, a couple of handfuls of basil, salt, black pepper, and add ½ cup of olive oil of the best quality.
  2. Marinate your steak with the mix above, ie., put steak in a plate and massage the steak with your hands, covering it well with the olive oil marinade. Let it rest for 20 minutes at room temperature.
  3. Remove the steak from the platter,. Cook the steak over a very hot grill to taste.  I usually cook a 1-inch thick steak for 2 minutes  per side for rare meat,  or times 2 for a total of 8 minutes- if you like medium-cooked meat.
  4. Put the steak back on the platter with the remaining olive oil, onion, and basil.
  5. Buon appetito!

La mia bistecca è sicuramente la migliore del mondo-dopo la Forentina.  In breve: marinate la bistecca alta 2 -2 cm e mezzo, non meno per carità, in olio d’ oliva, abbondante basilico e mezza cipolla dolce o rossa tritata, sale e pepe nero, circa 20 min a temperature ambiente.

Cuocere su brace su caminetto ideale, altrimenti in ordine decrescente: griglia con carbonella, griglia al gas, fornello a gas.  Comunque sia, fate diventare la griglia incandescente e cuocere la carne girando ogni due minuti: al sangue 2 min per lato, medium, ripetere l’operazione 2 vlte cioè totale 8 min.  Più di 8 min è un peccato.  Rimettere la carne nella marinata originale, rigirarla e servrila con il basilico olio e cipolla della marinate.

Dopo averla mangiata capirete perchè non vado mai a mangiare bistecche al ristorante.
